I started off my day with a very small breakfast of a chocolate chip granola bar. Fun fact – a student of mine gave this to me as a random present a few weeks ago, so cute! Our school has lunch at 10:40 am (brunch?) so I usually have a small breakfast or else I’m not hungry at our lunch time.
For my lunch I had a bit of lemon pepper rotisserie chicken that is sold at Wegmans and mashed potatoes that I made this weekend in the crock pot. They were so easy to make and they turned out really good. I think I’ll be having mashed potatoes more often now! Sorry my picture isn’t very glamorous, but I really do eat my lunch out of a tupperware container on most days.
I usually have a snack and coffee when I get home from work, but since yesterday was Valentine’s day and today was out hundredth day of school celebration, I was exhausted and came right home to take a nap.
Dinner was pasta with pesto sauce and Brussels sprouts baked in the oven with olive oil, salt, and pepper. This meal is a staple for me! Not too hard to make and delicious!
Again, I was feeling very tired at night so I decided to not have a snack and just plop right into bed. Not a very interesting day of eating but I hope you enjoyed it anyway!
