What I Ate Wednesday – February 7, 2018

I’m looking for more inspiration for my weekly food posts. I’m not a very creative cook, so I really don’t have many ideas for new recipes. Please give me ideas of other things to write about on the food section of my blog! Or maybe I should redesign, get rid of this category and do something else. Let me know! Anyway, this is what you get this week.

Breakfast

For breakfast this morning I made something quick so I could get a few more minutes in bed. I’ve been really into peanut butter lately. I sometimes go months without eating peanut butter, and then I want to eat it every day – it’s just one of those foods I get obsessed with and then sick of. I also had a coffee.

I’m aware this is not a very appetizing-looking photo of my lunch, but it actually did taste pretty good. This was leftover from a Mexican takeout dinner last night. This is a fish taco with rice and beans on the side. Honestly, this restaurant that we ordered from is not my favorite, but everyone else in the friend group loves it.

I had quite a large snack this afternoon. And even though I had coffee, I ate too much, made myself sleepy, and had to take a nap. Ugh. I made popcorn with butter and salt.

My boyfriend made dinner for us tonight. I tried to save some of my salmon and peas for lunch tomorrow so I also made myself tomato, mozzarella, and basil as a side!

I’ve been waking up SO hungry this week! I definitely could not skip breakfast! I had two fried eggs and a piece of toast with butter. Obviously I also had a coffee.

I brought my lunch to work today. I packed leftover spaghetti and turkey meatballs. Last week I posted a link to a water bottle that was not the one I had (oops) so you can find my water bottle here.

Yes I had two snacks today. i had some goldfish and water at work while my students were eating their snack. I also found my new favorite snack at home – camembert cheese on bread and a pickle. You can call me weird but it is delicious.

I was so hungry tonight I completely forgot to take a picture of my dinner. I’ll be honest, though, and admit that we ordered pizza!

What I Ate Wednesday – January 25, 2018

Sorry this post is going up a day late – I actually took these pictures on a Wednesday and fell asleep before I could get the post up! Anyway, here it goes!

I just could not get out of bed this morning so I didn’t have time for breakfast. Of course, I needed that coffee though, as I was rushing around getting ready! I know it’s not healthy to not eat breakfast, but time was limited!

I packed my lunch for work today. I had leftover pasta with pesto sauce. You know that’s my favorite! I also had pretzel sticks. I’m pretty good about drinking water during the day if I drink it with a slice of lemon and lime. This water bottle is the best because it keeps my water bottle cold all day! You can find it here.

Hey I actually cooked tonight! I made salmon and asparagus in the toaster oven with olive oil, lemon juice, salt, and pepper. I also had leftover mashed potatoes. This was a delicious dinner!

What I Ate Wednesday- January 17, 2018

Here’s what I ate this week on a day that I didn’t have work (and still didn’t eat perfectly healthy)!

Breakfast

I actually went to the gym this morning, yay! When I got back I was super hungry and thirsty so I had scrambled eggs with a little Mexican cheese sprinkled on top, as well as a coffee and water with lemon and lime. I’ve been finding that if I put lemon and lime in my water I like it better and I’m more likely to drink a lot!

This looks like a big lunch (and it was) but it was just leftovers from dinner a few nights ago. We had bought a rotisserie barbecue chicken, so there was a little bit left of that, although I would have preferred a flavor other than barbecue. I also had leftover mashed potatoes and green beans. As you can see, I love to put lots of pepper on my food! I drank another glass of water.

I was hungry between lunch and dinner so I had a little snack. I made some tea with caffeine in it to keep me alert and I had spreadable cheese that I recently bought from a local vendor (It’s almost like cream cheese mixed with hot sauce, but much more appetizing than that sounds). I like to spread the cheese on Club crackers.

For dinner our friend came over to hangout so we just ordered pizza and garlic sticks from Pizza Hut. I usually just get the cheese pizza from there. Pizza Hut is definitely my favorite fast food pizza place!

And that’s it! I wasn’t very hungry after dinner so I didn’t end up having a snack later that night. What did you eat this week?!

 

What I Ate Wednesday – April 12, 2017

I’ve been at home with my family this week, so I was a bit spoiled. My meals were made for me – and I didn’t even have to do the dishes! We also had Easter a week early and had lots of leftovers which have been included in some of today’s meals. Enjoy!

For breakfast I had a hard-boiled egg which I always like to have with a little bit of salt. I had a peach yogurt from Aldi and my usual coffee with milk and sugar. Bonus – you can see me taking the picture in the reflection on the spoon!

Lunch was at a hibachi restaurant. I didn’t want to bring my big camera in, so I just took a picture with my phone – hence the lower quality. I had hibachi shrimp with fried rice, lo mein, and vegetables. I realize I also had leftover hibachi for lunch last week. I don’t go that often so it was just a coincidence!

Dinner was one of my favorites – bean dip! My mom makes it with refried beans, sour cream, and shredded cheese. We dip into it with pretzels and tortilla chips. We also had a vegetable plate with cucumbers, green peppers, carrots, and tomatoes.

For dessert, I had leftovers from Easter. This is Heaven in a Bowl (really that’s it’s name) and it’s made with brownies, peanut butter cups, pudding, peanut butter, and whipped cream. So yummy!

What I Ate Wednesday – April 5, 2017

This is not a drill – an actual blog post, not just a YouTube video! Yay finally! Hopefully I’ll get back into the swing of posting regularly. This is what I ate on a regular week day. Enjoy!

For breakfast, I don’t usually eat much and I am usually much more concerned with my coffee. I had a hard-boiled egg that I had made the night before and some cottage cheese. Oh, and of course, coffee! A nice, light breakfast that’s quick and easy.

Lunch was leftovers from the previous weekend. My boyfriend and I went to a hibachi restaurant with his dad and I had hibachi salmon with fried rice and veggies. It was just as good leftover after a day!

When I got home from work I was hungry, but it wasn’t really time for dinner. So, I had a tea (English Breakfast Tea from Wegmans) and popcorn. I have a popcorn bowl for the microwave so it’s super easy to make. I can add as much (or as little) butter and salt as I want.

For dinner I just made pasta with tomato sauce and Parmesan cheese. For a vegetable I had Brussels sprouts in a garlic sauce that came in a steamable bag from Wegmans. I’m not going to lie, I was not a fan of the sauce on the Brussels sprouts, but when I bought them I didn’t realize it already came with a sauce. Oh well, lesson learned.

I was full from dinner and went to bed early, so I didn’t have an evening snack. What have you eaten this week? See you soon!

For my breakfast, I had organic oatmeal from Wegmans with brown sugar sprinkled on top. I also had a coffee with almond milk and sugar. A simple, easy, and healthy breakfast! I make my oatmeal from the instant packets and I just add boiling water.

Not my healthiest lunch, but I was really in the mood for mac and cheese. I get the spirals from Wegmans and I add the cheese packet, butter, and almond milk. I make everything with almond milk since it lasts longer than regular milk and I can’t tell the difference in taste. I add lots of pepper on top of my mac and cheese. For my drink, I had Honest Kids Lemonade. Yes, this is a children’s drink, and yes it’s delicious

For a little pre-dinner snack, I had celery sticks with cream cheese on them. I get the celery sticks that are pre-cut simply because I am lazy. I also had some earl grey tea.

I came up with dinner at the last minute and I think I did a pretty good job! I had some salmon frozen that I thawed and seasoned with olive oil, lemon juice, salt, and pepper. I made some brown rice and asparagus seasoned with olive oil, salt, and pepper. I made the asparagus in the oven and the salmon in the toaster oven.

What I Ate Wednesday – February 15, 2017

I started off my day with a very small breakfast of a chocolate chip granola bar. Fun fact – a student of mine gave this to me as a random present a few weeks ago, so cute! Our school has lunch at 10:40 am (brunch?) so I usually have a small breakfast or else I’m not hungry at our lunch time.

For my lunch I had a bit of lemon pepper rotisserie chicken that is sold at Wegmans and mashed potatoes that I made this weekend in the crock pot. They were so easy to make and they turned out really good. I think I’ll be having mashed potatoes more often now! Sorry my picture isn’t very glamorous, but I really do eat my lunch out of a tupperware container on most days.

I usually have a snack and coffee when I get home from work, but since yesterday was Valentine’s day and today was out hundredth day of school celebration, I was exhausted and came right home to take a nap.

Dinner was pasta with pesto sauce and Brussels sprouts baked in the oven with olive oil, salt, and pepper. This meal is a staple for me! Not too hard to make and delicious!

Again, I was feeling very tired at night so I decided to not have a snack and just plop right into bed. Not a very interesting day of eating but I hope you enjoyed it anyway!

What I Ate Wednesday – July 20, 2016

For breakfast I had a poppy seed bagel with low fat cream cheese spread on it. I’m very picky about my bagels and I am convinced they don’t make them right in Western NY! So, whenever my family visits, or I visit home, I pick up a dozen bagels from a little shop by my house and freeze them. That way, I can just take them out and toast them whenever I want! I also had coffee with milk and sugar and water, as well as a hard-boiled egg.

By lunch I was pretty hungry so I had a salad that I topped with mozzarella cheese. I like Greek vinaigrette dressing from Aldi. I also had pasta with pesto sauce and cashews. This might be my all-time favorite food! I had made mine the night before so I just heated up the leftovers for lunch.

By the afternoon I was feeling a little sleepy, so I made some coffee and put it in the fridge for a while to make iced coffee. During the summer I definitely prefer iced coffee in the afternoons. I mixed mine with milk and sugar again.

For dinner I had a sort of strange assortment of foods. I had been marinating chicken in spiedie sauce (my favorite chicken marinade) so I cooked that in the toaster oven. I also had macaroni salad left from a restaurant a few days ago. I didn’t feel like cooking a vegetable so I just washed a few baby carrots as a side.
